Lemony Roasted Cauliflower Pasta
/This light and lemony pasta is perfect for summer. It’s easy to make, healthy, and really delicious. In this recipe I give measurements, but I want you to try to be in control of your seasonings. Make it to your liking. Feel free to adjust the amounts to fit your preferences. And as always I encourage you to choose organic ingredients whenever possible.
Lemony Roasted Cauliflower Pasta
1 head of cauliflower
Box or bag of pasta of your choosing (penne, gemelli, or farfalle pastas are great options)
1 cup of fresh cherry tomatoes
1 cup of kalamata olives or plain black olives
1 cup feta cheese crumbles
1 big handful of baby arugula
1 big handful of baby kale
1 TBLS garlic powder
1 TBLS dried or fresh basil
1 TBLS dried thyme
1 tsp dried rubbed sage
Salt & Pepper to taste
Juice of 1 large lemon or 2 small
1-2 TBLS nutritional yeast
Balsamic vinegar
Olive oil
Cook pasta according to direction on the pasta. Drain and rinse cooked pasta and add to a large bowl. Drizzle olive oil over the pasta and toss. This will help the pasta to not stick to itself while you are preparing everything else.
While the pastas is cooking, chop one head of cauliflower into larger bite size pieces. Add a small amount of butter and avocado oil to a hot skillet and then add the cauliflower. Season with garlic, basil, thyme, sage, salt and pepper. Cook till tender and browned in spots. Add cauliflower to the bowl of pasta. Toss to mix.
Next lightly chop a mixture of kale and arugula and add to the hot skillet with a little avocado oil. Sauté briefly till the greens are wilted. Add greens to the bowl of pasta and toss.
Cut cherry tomatoes and black olives in half. Add to pasta mixture. Toss to mix.
Once all the ingredients have been added to the bowl of pasta it’s time to season it to your liking. Squeeze the juice of one lemon onto the pasta. Add more olive oil, the balsamic vinegar, and the nutritional yeast. Season with salt and pepper. Now its time to taste your creation and adjust any seasonings to your liking. Once its to your liking add the feta cheese and toss lightly to mix. Serve and enjoy.
I like to serve my pasta with a side of fresh arugula or a salad, lemon slices, and homemade croutons.
