Lemon Garlic Roasted Brussels Sprouts

These are not the brussels sprouts that we all knew as kids. Those brussels sprouts were always so mushy and the flavor was…well how do I put it kindly…disgusting! Gagging on brussels sprouts was a common occurrence.

This recipe is a game changer for brussels sprouts. Delicious, crispy and full of flavor. Not to mention fast and easy to make.

Lemon Garlic Roasted Brussels Sprouts

  • 2 lbs brussels sprouts

  • 1/2 tsp garlic powder

  • Juice of one lemon

  • Olive oil

  • Salt & Pepper to taste

  • 1 TBLS nutritional yeast (optional)

Preheat oven to 400 degrees.

Cut stems off brussels sprouts and then cut in half. Line a sheet pan with parchment paper and place all the cut brussels sprouts on top of the paper. This will help anything from sticking and burning to your pan and will make clean up much easier.

Pour enough olive oil over the brussels sprouts to lightly coat them. Squeeze the juice of one whole lemon over the top of all the brussels sprouts. Then sprinkle on the garlic powder, salt, pepper, and nutritional yeast (if using). With your hands toss the brussels sprouts to help coat all the pieces.

Cook in the oven for 15-20 minutes. Half way through cooking time you will want to flip all the brussels sprouts over to help them cook evenly. The brussels sprouts are ready when they are a golden brown and have some crispy leaves.
